Things I Like Today…

… are these granola bars I’ve made today.

They are quite easy to make:

Just melt some butter with a bit of honey and sugar in a pot. Then add different types of chopped nuts, oatmeal (or some Bircher-Muesli) and dried fruits (besides raisins you could take for example dried papaya or mango for the exotic touch).

Stir all ingredients and then spread them on baking paper. Bake the mixture for about 25 minutes until it becomes golden brown.

Finally let it cool before you cut it into bars.

…are these delicious home-made Christmas cookies made out of short pastry.

 

What you need for the dough:

300 g flour
100 g sugar
1 egg
200 g cold butter
a pinch of salt

Mix the flour, the sugar, the egg and flakes of the butter very quickly so that the butter doesn’t get too warm. Let the dough rest in the fridge for about one hour.

Roll the dough flat on your worktop and cut out the shapes of your choice.

The cookies need not more than 10 minutes in the oven (160 degrees).
Then you can dip them into chocolate and decorate them nicely.

…are sweet and juicy peaches in a pastry cake.

The recipe is exactly the same like the one for the apricot cake below, only add some poppy seeds to the curd and spread the mixture on the pastry before you put the peach slices on top.

are sweet apricots in a delicious apricot-almond-cream pastry cake!

Isn’t the colour of the fruits beautiful?

 

Here’s the recipe:

For the pastry you need:

300 g flour
200 g butter
100 g sugar
2 eggs
some lemon peel

For the cream you need:

200 g butter
250 g powdered sugar
400 g curd
some lemon peel
250 g finely ground almonds
25 g vanilla pudding powder
500 g apricots (cut into halves)

Mix the flour, butter, sugar, eggs and lemon peel and let the dough rest for half an hour in the fridge. Then roll it out and fit it into a well creased pie tin.

For the cream stir the butter and the powdered sugar, add the curd, some lemon peel, the vanilla powder and the almonds.

Spread the cream on the pastry and arrange the apricots neatly on top. Bake at 170 degrees around half an hour until golden brown (or apricot…).
